Stop talking, start doing, and Whole Wheat Chocolate Chip Cookies
In which I finally decide to stop TALKING about it, and JUST DO IT. (Nike really had something with that ad campaign!)
Earlier this week, I had a colleague come up to me. “Why do you run?” She asked me. “You don’t need to lose weight.”
And I laughed. “No, I’m not trying to lose weight,” I replied. “I run for fun.”
She looked at me like I was a crazy lady.
This woman is everything I don’t want to be.
She is unfit.
She is unhappy.
She is poor financially.
She hates her job.
She complains all the time.
She has accepted the status quo and consciously decided to stop learning new things.
She is my worst nightmare.
I don’t want to grow up and be that way.
So I am making a conscious decision. To always learn, to find happiness, to go after my goals.
Starting with some more races, more swimming (there’s a triathlon at some point in my future), and building my yoga for runners series.
And baking tasty cookies. Because you can find happiness and still be happy. With chocolate chips. Maybe I will bring some to her in the office. Maybe I won’t. But I will try to smile extra at her. Because I won’t end up like her. Complaining, unfit, poor, unhappy, and static.
I want to always live more, love more, experience more joy, and yes–it’s okay to have those things and want/find ways to make more money too.
So I’m telling you now. I’m doing it. I’m living life to the fullest. I’m pursuing my yoga-related goals. (And writing goals, too, don’t despair!) Do you want to say YES with me? Yes to going after your dreams, yes to success?
I am no longer making excuses. I’m going to STOP TALKING about what I want to do and START DOING what I’ve been saying I’ll do.
And, don’t worry, I’m going to keep running and baking on the journey.
Starting with a healthy take on chocolate chip cookies.
Whole Wheat Chocolate Chip Cookies
1 cup whole wheat flour
1 cup all purpose flour
1 tsp salt
1 tsp baking soda
1 cup brown sugar
1/2 cup organic granulated (white) sugar
1 cup unsalted butter (softened)
1 tsp vanilla extract
1 12 oz package semi sweet chocolate chips (I used the Trader Joe’s brand!)
Heat oven to 375. Meanwhile, combine flours, salt and baking soda in a small bowl. Blend well and set aside. In a large bowl, cream butter. Add the sugars to the creamed butter, followed by eggs and vanilla. Beat with a mixer until creamy. Slowly, add in flour mixture (a little at a time) and continue to blend well. Once flour is thoroughly mixed, add in chocolate chips and mix by hand. Drop teaspoons of mixture onto ungreased cookie sheets. Bake for eight to ten minutes. Do not burn!
I find it makes approximately three dozen cookies, but you may have more or less–depending on how big your teaspoons of mixture are! (Isn’t it neat how everyone makes chocolate chip cookies differently?)
