Broccoli Bacon Brunch Eggs

I love brunch.

I especially love eggs.

Even more, I love it when I make up really tasty recipes using eggs.

This one is kind of a hybrid between a crustless quiche, a casserole, and a frittata (don’t you just love to say frittata?).

What’s more it’s actually pretty healthy! (WAHOO!) I don’t believe in counting calories, I just believe in packing in nutrients and using the best possible ingredients, while also eating in moderation! 😉 This contains some super good for you ingredients–and super good for your taste buds too!

Plus, it has BACON, BROCCOLI and is perfect for BREAKFAST or BRUNCH! MMM!

Best enjoyed with a cup of coffee, crusty bread, a mimosa or Bloody Mary, and the company of great friends!

Instructions
  1. Pre-Heat Oven to 400. Grease an 8 x 8 baking dish (I use glass) with a little bit of olive oil. Set aside.
  2. While oven is heating, cook bacon (if necessary) and steam or boil broccoli. Make sure broccoli is chopped into small bite-sized pieces.
  3. Heat a skillet over medium-low heat. Add olive oil. Add chopped onions. Cook slowly. Add minced garlic when onions are almost translucent. Add in broccoli and cook for approximately 1 minute, or until onions and garlic look perfect! Set aside.
  4. In a large mixing bowl combine eggs, egg whites, and milk. Add salt, pepper, nutmeg, and mustard. Using a hand beater combine until frothy. Add Swiss and Gruyere shredded cheeses and mix in by hand.
  5. Pour the broccoli/onion/garlic combo into the baking dish. Pour the egg/cheese mixture on top. Sprinkle with chopped bacon. Finish with generous sprinkling of Parmesan Cheese.
  6. Bake for 30 minutes or until set. If you like the top crispier, you can broil it for the last couple of minutes to get extra crispy cheese and bacon!
  7. Let sit for a minimum of 5 minutes before serving, so that the egg dish can rest!!! (And the cheese will taste so much better this way!)
  8. ENJOY! I recommend serving with crusty bread and a side-salad.
