Pesto Zucchi Noodles “Zoodles” Salad (+ Recipe)

What’s a zoodle, you ask?

I love to sneak my veggies.

How do you make zucchini noodles, you may ask? With an awesome spiral slicer, like this one from Common Sense Goods:

And now….how you make the zoodles! A spiral slicer can make noodle versions of all sorts of vegetables! Sweet Potato, carrot, cucumber, raddish, you name it!
You just have to slice off the tops of the zucchini, choose how big you want your pasta (“angel hair” or “spaghetti”) and start cranking:

I just couldn’t stop smiling and laughing, because I so enjoyed cranking those noodles out!
You can use these new zucchini noodles in any way that you would normally use pasta. (If you want warm pasta, you will need to saute them as an extra step.)
I chose to make the zucchini zoodles into a PASTA SALAD! Yum! All the pasta, none of the guilt. 😉 (And with double the veggies, woot woot!)
Such a delicious final pesto pasta salad, if I do say so myself!
So creamy! So tasty! And so full of vegetables! (Not to mention naturally gluten-free.) You could play with adding other veggies to the mix–carrots, spinach, bell pepper, and more!
