Quinoa Bacon “Macaroni” and Cheese

For those days when you want a healthier variation of cheesy, cheesy goodness.

By popular demand, my quinoa, bacon, and broccoli macaroni and cheese!

I hadn’t been planning to share this recipe (it was just me fooling around in the kitchen), but I received ENORMOUS response to my photos and so, without further ado, here it is:

  1. 1. Cook Quinoa to directions. (HINT: I use Chicken Stock for a richer flavor.) Set aside.
  2. 2. While Quinoa is cooking, make bacon to your preference. (Either on stove-top or in oven.) Set aside. Once cooled, chop bacon into small pieces or tear with hands.
  3. 3. Prepare broccoli. I had chopped frozen broccoli I wanted to use, so I boiled it. You could also steam broccoli if you have a steamer. But you will want to make sure your broccoli is in bite-sized pieces and pre-cooked.
  4. 4. In a sauté pan over low heat add one tablespoon of olive oil. Add in chopped onions (you may use more if you'd like) and sauté until onions are just translucent. If you'd like to add other veggies or garlic, now is also the time to heat this up! (The beauty of this recipe is that you have an endless amount of veggies you can throw in or flavor enhancers, depending on your preference!)
  5. 5. In a large mixing bowl combine quinoa, broccoli, onions, and bacon. Add remaining tablespoons olive oil. Add in shredded cheddar (I recommend you grate the cheese yourself for best flavor!). Add salt and freshly ground pepper to taste. Mix thoroughly to combine ingredients.
  6. 6. Grease a casserole pan with your favorite grease. (I recommend using either butter or olive oil for this recipe.) Pour in mixture and spread evenly throughout pan.
  7. 7. Add freshly grated parmesan cheese on top liberally. You may want to add more, depending on your taste-buds. Sprinkle with Paprika at the very end.
  8. 8. Bake for approximately 25 minutes or until crispy and golden. DO NOT OVERBAKE! Keep an eye on the oven. I recommend checking at around 20 minutes to see how things are looking.
  9. 9. Remove from oven and LET IT SIT for at leas 10 minutes before serving, so that flavors can rest and cheese won't be drippy, but just delightfully gooey. Serve with your favorite side salad and (optional) a glass of white wine! ENJOY!

I really recommend you use quality ingredients. The better the cheese, bacon, vegetables, etc. the better this recipe will be. This recipe also freezes quite well and can be doubled for large crowds!

It’s really a beautiful template because you can easily switch up the veggies, switch up the bacon (you could use sausage, vegetarian crumbles, etc.), even switch up the types of cheeses, etc. Wonderful easy template to make all sorts of delightful macaroni and cheese variations–all thanks to quinoa! 🙂
