Through the years with the bestest salad EVER

This weekend I made the best salad ever.

There’s nothing really very fancy about it.

It’s simple as can be.

But. I. Love. It.

I have been making it since I first got facebook–back in 2004.  According to the facebook timeline April 30, 2004 is the day that I joined facebook. My facebook anniversary. I have used facebook for over eight years. That is CRAZY. And kinda scary.

I have changed a lot (or a little) over those eight years, depending on how you look at it.  I still feel the same as I did back in 2004 when I had just turned 19. But I guess I’m a bit different now.

Has vanished. There are NO PHOTOS from 2004. I can remember old profile pictures but…They are gone. Poof! Vanished. What gives? Anybody know where these pictures went? There are NONE until 2005.

I’ve changed a lot!! And not so much. Pretty crazy to think about.  But….for those eight years I have made different variations of this oh-so-delectable salad

I will make it forever.

I love it.

Lora’s AMAZING salad
Serves one.

The bestest salad ever. For serious!

1/4-1/2 of a ripe avocado, cubed
1 oz cooked pancetta, chopped  (I have also used bacon, just chicken, tempeh bacon, and tofu)
1/2 cup hearts of palm, sliced and separated
1/4 cup sweet and spicy pecans (I buy the Trader Joe’s ones, or make my own)
1/8-1/4 cup dried cranberries (if you don’t have cranberries, use beets)
1/8-1/4 cup gruyere cheese, shredded (or other favorite cheese)
2-3 cups mixed greens
Olive oil
Lemon juice
Salt and pepper

Combine ingredients.  Mix 1-2 tablespoons olive oil with lemon juice, to taste.  Add to salad. Add freshly ground pepper and sea salt to taste. Toss thoroughly. I recommend tossing 21 time for perfection. My theater professor told em to do this back in 2006 and the 21 times salad toss has never failed me yet.

The variations are endless. You can use spinach, kale, make it vegetarian, use a different nut, use different cheese, mix balsamic vinegar instead of lemon juice, etc.  Try it today! It will be your go to salad for years to come, too.  

Hair may change. Facebook may change. But this salad remains delectable. And oh so easy.
