Paleo Avo-Egg Breakfast


I love avocados.
They are my go-to comfort food.
Sometimes, all I need is avocado to start my day off on the right foot!!
Paleo Avo-Egg Breakfast
Serves One.

  • Paleo Coconut Bread (preferably home-made)
  • 1/2 ripe Hass Avocado
  • 2 eggs
  • Salt
  • Pepper
  • Hot Sauce or Siracha Sauce
  • Olive Oil or Coconut Oil

1. Heat oil in pan. Fry two eggs to desired level.
2. Meanwhile, in separate pan or toaster, toast two slices of coconut bread.
3. Mash the avocado in a bowl. Add salt and pepper, to taste.
4. Spread avocado mash on toast. Top with fried egg. Add hot sauce or siracha sauce!
5. Serve with coffee and enjoy!
